What is Jaggery ?
India is the major producer of jaggery in the world. It has a long tradition of jaggery production, which is reported to date back to the Neolithic period in India. Jaggery is popularly known as "medicinal sugar" and is nutritionally comparable to honey. It is made from the product of crystallized sugar cane juice boiled in large vats and then reduced to a syrup. It is brown in color due to the presence of molasses and minerals such as iron, potassium, copper, calcium, and magnesium.
It has been used as a sweetener in Ayurvedic medicine. Indian Ayurvedic medicine considers jaggery to be beneficial in treating throat and lung infections. Today, jaggery benefits are spreading around the world thanks to increased international trade, improved transportation, and the popularity of Indian culture.
